We are in the sixth week of isolation and it is increasingly difficult to resist the temptation of desserts that every day we are put to the test in social networks. And the truth is that we deserve it, so I’m going to leave you a delicious recipe for a light cheesecake very easy to make that is perfect for a sweet treat without any remorse.For the cream
0% fat whipped cream cheese, 500 g Skimmed milk, 50 ml Neutral gelatin, 6 leaves Liquid sweetener, 15 ml Vanilla essence, 1 teaspoon (or zest of the peel of a lemon) Egg whites, 2

Step 1
Start by preparing the base, for this we crush the cookies or whole grain breakfast cereals with the fat-free cream cheese until a paste is formed.
Line the base of a springform pan with baking paper, spread the mixture on the bottom and flatten it well with a fork. Lightly grease the sides of the mold and place a strip of baking paper. Reserve in the refrigerator while preparing the cream.
Fill a bowl with cold water and soak the gelatin sheets.
Step 2
In a clean bowl, beat the egg whites until stiff with an electric whisk and set aside.
In another bowl, mix the fat-free whipped cream cheese with the sweetener and the vanilla essence or lemon zest. Heat the milk in the microwave for 30 seconds, drain the gelatin well and dissolve it in the hot milk.
Incorporate the dissolved gelatin into the bowl with the cheese and mix vigorously. Then incorporate the egg whites until stiff with the help of a spatula and using encircling movements.
Step 3
Optionally we can decorate the walls of the mold with some of the fruit, then pour the cream into the mold, cover with film and leave in the refrigerator for at least six hours or until the next day.
Step 4
When ready to serve, decorate with the rest of the fruit, remove the ring from the springform pan and carefully peel the baking paper from the sides.
Notes
If you don’t have fresh fruit on hand, you can cover it with a bit of unsweetened jam or, if you have used vanilla essence, you can grate a couple of ounces of dark chocolate that will give it a touch like straciatella.
In all cases you will have an easy to make, light and refreshing dessert for these spring days.
If we want to reduce the waiting time, we can prepare our light cheesecake in individual cups, this way we can consume it without unmolding so there will be no problem in consuming it if it has not finished curdling at all, the only thing is that it will be somewhat creamier, but no less delicious.
