Lentil-walnut meatloaf with balsamic glaze

Recipe for a vegan Easter menu, specifically for an amazing meatloaf without a piece of meat, yet moa and very good, which will surely be appreciated even by meat eaters.

Ingredients:

3 cups of cooked lentils 1 cup walnuts 1 cup shredded celery 1 cup shredded carrots 1/2 cup spelt or oat flour

1/2 cup breadcrumbs 1/3 cup dried cranberries 3 tablespoons balsamic vinegar 3 tablespoons ground flaxseed 2 tablespoons olive oil 1 and ½ tablespoons maple syrup 1 tsp thyme 1 tsp oregano 70 ml tomato puree 40 ml apple puree 3 pcs

2 pcs finely chopped onion 1 pk small grated apple a pinch of chilli pepper, salt

Procedure:

Mash the cooked lentils with a potato masher. Place the chopped nuts in a preheated oven at 160 °C and bake for approximately 8-10 minutes, then let cool.

In a pan with a little oil, fry the onion and garlic until golden brown. Add the celery and carrots and cook for a few minutes. Finally add the grated apple, cranberries, thyme, oregano, salt and pepper.

Add the nuts, flaxseed, oat flour, breadcrumbs and vegetable mixture to the bowl with the lentils and mix thoroughly. Season with salt, pepper and a pinch of chilli. If the mixture is too dry, a tablespoon of water can be added. Squeeze into the tin.

In a bowl, mix the tomato puree, applesauce, balsamic vinegar and maple syrup. Spread this sauce over the meatloaf.

Place it in a preheated oven at 180 °C. Bake for approximately 45-55 minutes.
