Lentil and Tuna Salad

Here’s the recipe for Lentil and Tuna Salad, a tasty, light, vitamin-rich salad made with lentils, tuna and Vegetable Recipes that’s easy to prepare and perfect to serve as a light meal or cold appetizer for those with a sweet tooth.

Ingredients for 4 people:

150 g lentils 180 g tuna au naturel 50 g arugula 15 cherry tomatoes 2 carrots 1 cucumber 1 garlic clove 2 tablespoons canned corn drained 1 tablespoon olive oil 1 bay leaf salt, pepper

Preparation:

Soak the lentils in cold water for about 1 hour, then drain
In a pot filled with salted water, add the lentils, peeled garlic clove, and bay leaf then cook for about 25-30 minutes.
Drain the lentils then remove the garlic clove and bay leaf.
Peel and julienne the carrots, and cut the cherry tomatoes into 4, then peel and dice the cucumber.
In a salad bowl put the carrots, tomatoes, cucumber, arugula, corn, crumbled tuna then salt, pepper and mix.
Add the lentils and olive oil and mix again.
Then place your salad in the fridge until ready to serve.
