Lentil and broccoli dumpling with mozzarella

100 g red lentils 3 stalks celery stalks 100 g baby spinach 1 pk tomato 1 pk red pepper 1 pk broccoli 3 cloves garlic 1 pk mozzarella 2 pk egg 1 KL salt 1/2 KL ground black pepper 1 KL sweet red pepper 1 tbsp oil 1/2 liter vegetable broth

1. In hot oil, sauté chopped celery stalk, bell pepper, tomato and garlic. 2. Add rinsed red lentils (no need to boil), season lightly with salt and sauté for 5 minutes. 3. Pour 1/2 litre of vegetable stock over everything, season with black pepper and sweet red pepper and add the broccoli florets. 4. Simmer everything under a lid for 10 minutes. 5. Then transfer the whole vegetable mixture to a baking dish and bake in a preheated oven at 220 degrees for 20 minutes (it will make a wonderful crust). 6. In the meantime, finely chop (or grate) the mozzarella, add 2 eggs and 1 KL of red pepper and whisk everything by hand. 7. Pour over the pre-baked Vegetable Recipes and put back in the oven for 10-15 minutes (do not change the temperature). 8. Let cool slightly and serve. Enjoy!
