Lemon Shrimp with Grilled Halloumi and Thyme

Halloumi cheese brings a whiff of the Mediterranean to the menu, as its homeland is Cyprus. The cheese is made with a mixture of goat’s and sheep’s milk, flavoured with dried mint leaves, according to the original recipe. It is made in blocks and preserved in a salt solution. Try this gourmet recipe for halloumi cheese with prawns.

Ingredients:

500 g shrimp 225 g Dodoni Halloumi 80 ml olive oil 40 ml /td>

oil 1/2 tsp fresh thyme 2 pcs garlic cloves 1 pcs red pepper 1 pcs yellow peppers 1 pcs onions peel of 1 untreated lemon whole wheat bread (4-5 slices) juice from 1 lemon ground pepper salt

Procedure:

  • Wash and cut the peppers into strips. Drain the prawns in a colander before preparing.
  • In a deep frying pan, heat the olive oil and fry the onions until soft, approximately 2-3 minutes. Then add the smashed garlic and sauté until the garlic releases its aroma. Add the peppers, season with salt and pepper and sauté for 5-6 minutes until the Vegetable Recipes are soft. Finally, add the prawns, season again with salt and pepper and fry for another 2-3 minutes.
  • Transfer the mixture to a heated metal bowl to keep warm.
  • Place the diced halloumi cheese on a skewer on a hot grill and cook on two sides to give the cheese a light golden colour.
  • Add the ouzo to the used pan from preparing the Vegetable Recipes and wait for the alcohol to evaporate, then add the lemon juice, lemon zest and thyme. Deglaze to obtain the sous. Finally, add the grilled Dodoni Halloumi cheese and stir for a few minutes to allow the cheese to take on some of the flavour of the sous.
  • Combine the prawns with the Vegetable Recipes and the cheese with the sous and serve with sliced bread.
