Lemon meringue Christmas log in Thermomix
Here is the recipe for Lemon Meringue Yule Log in Thermomix, a delicious log rolled in a lemon meringue pie style, easy and simple to make that will appeal to all lemon lovers.
Ingredients:
Lemon curd:
zest of 3 lemons 150 g lemon juice 150 g sugar 50 g butter 1 tablespoon cornstarch 2 eggs + 1 egg yolk
For the rolled cookie:
4 eggs 125 g sugar 125 g flour 1/2 packet baking powder 1 teaspoon vanilla extract Cane sugar syrup for brushing (Recipe here )
For the meringue:
3 egg whites 150 g powdered sugar
Preparation:
Prepare the lemon curd:
Put in the bowl of lemon zest and sugar then mix 10 sec at speed 9.
Scrape down the sides with the spatula.
Add the lemon juice, butter, cornstarch and eggs then set 20 min at 90°C on speed 2 without a beaker.
Then mix for 20 sec on speed 5.
Then let cool.
For the sponge cake, insert the whisk into the bowl and put the eggs, sugar and vanilla extract then set 1 min at speed 3.
Add the flour, and yeast then set 40 sec at speed 4.
Pour it onto the baking sheet covered with parchment paper, spread evenly with a spatula then bake for 10 minutes.
Then turn out the baked sponge on a clean, damp tea towel, then remove the baking paper.
Roll it on itself empty in the tea towel then let it cool.
Unroll then brush it with the cane sugar syrup ( Recipe Here) and spread the prepared lemon curd then roll it tightly and place in the freezer for 10 minutes
Meanwhile prepare the meringue, put the egg whites in the bowl with a pinch of salt then give 2 strokes of turbo.
Then insert the whisk and set 4 minutes at speed 3.5.
After 2 minutes pour the powdered sugar through the opening.
Put the meringue in a piping bag then cover your meringue log.
Then caramelize the meringue with a blowtorch.
Decorate then place in the fridge until ready to serve.
