Lemon cake

A rich, lemon-flavoured coffee cake that is very easy to make. The lemon cake bakes effortlessly and juicy.

Ingredients for 4

1 lemon zest and juice (organic if you prefer);225g butter or margarine just over 2 dl sugar 3 eggs 1 tsp baking powder 1 tbsp vanilla sugar 3,5dl wheat flour

Make a cake tin (2 l) and breadcrumbs.)

Peel the lemon well, grate the zest and squeeze out the lemon juice.

Whisk the softened butter and sugar until fluffy. Add the eggs, one at a time, beating vigorously. Add the lemon zest.

Blend the dry ingredients together and add to the dough alternately with the lemon juice.

Place the dough in the pan and bake the lemon cake on the lower shelf of the oven for about 45min/175C. Allow the lemon cake to rest in the pan for a while before turning it out.
