Leek soup

ingredients

1,5 liters water 250 g leek 40 g lard (other fat – butter, oil) 50 g plain flour to taste salt to taste ground black pepper 250 ml 12% cooking cream

procedure

1.

In a soup pot, make a light roux of fat and flour.

2.

Dilute it with water, season with salt and bring to the boil.

3.

Then add the sliced leeks, bring the soup to a boil.

4.

After boiling, boil for about 10 minutes until tender over low heat.

5.

Season with salt, ground black pepper.

6.

Finish the soup with cream, simmer and serve.
