Leche frita, recipe for those who have never made fried milk

Unlike torrijas, to make leche frita you don’t have to worry about getting the bread to make it. In fact it’s rare that someone who cooks at home, even the bare minimum, doesn’t have the ingredients on hand to make this dessert that is pure tradition and is so good that it would be a shame for it to get lost among Oreo milkshakes and other modernities. That said without detracting in any way to Oreo milkshakes that we also love.

Easter fried milk recipe
It may seem laborious when you read it, but I assure you it is not difficult at all.
Step 1
We reserve half a glass of milk and heat the rest over very low heat with the cinnamon stick, the peel of half an orange and half a lemon and 4 or 5 tablespoons of sugar. Meanwhile, we take the opportunity to dissolve the cornstarch in the cold milk that we have reserved and to grease the dish in which we will pour the mixture with oil or butter.
Step 2
When the milk starts to boil, remove the cinnamon and citrus peels and add the dissolved cornstarch while stirring until it thickens.
Step 3
Pour the mixture into the greased bowl and cover it with plastic wrap in contact with the cream so that it does not form a crust on the surface. Store in the refrigerator and wait about four hours or until it is completely cold.
Step 4
Cut the dough into regular squares of about 4 or 5 centimeters. Dredge them in flour and beaten egg and fry them in very hot oil until they are golden brown on the outside. Take them out and leave them on a colander or on a grid to drain the excess oil.
Step 5
Finally, we coat each of the pieces in a mixture of sugar and cinnamon and place them on the plate or tray where we are going to serve them.
