Lattice cake

1 pk palmarin 5 dkg butter 1 pk baking powder 23 dkg powdered sugar 1 packet vanillin sugar a little grated lemon peel 1 pk egg 1 pk egg yolk 3 tbsp whipped cream 550 g semi-coarse flour 1 tbsp cocoa 1 cup apricot jam

Place the palmarin, butter, semi-coarse flour, baking powder, caster sugar, vanillin sugar and lemon zest in a large bowl. Grind everything together and knead the dough, adding the whole egg, egg yolk and cream.

Divide the dough into 2 parts. Add the cocoa to the smaller part. Roll out the white dough, place on a greased and floured baking sheet. Spread the jam over the dough.

Shape the dark dough progressively into peels and place on top of the jam to form a lattice. Bake at 180°C until the pastry is coloured.
