Lašské pork knee

Recipe from the show “Boys in action” by Mr. Karel Drápal from Ostrava. Knees rubbed with garlic and seasoned with pepper, smothered on a vegetable base, baked in the oven until tender.

Procedure:
1. Clean and wash the knee, make transverse and longitudinal cuts in the skin with a sharp knife, rub garlic rubbed with salt, salt and pepper into the cuts, place the knee in a pot, cover with a lid and store in the fridge overnight
2. Remove the knee and heat a tablespoon of lard in a large pot or baking dish and brown the knee on all sides and remove
3. In the base, fry the cleaned, diced carrots, parsley and celery, fry, add a spoonful of tomato puree, pour water or broth, add a few balls of allspice, put back the meat, cover with a lid and simmer for an hour on low heat
4. After an hour, uncover the lid, place the container with the knee in the oven and bake in a medium oven at 180 °C for about 2 hours until the knee is completely tender and a beautiful golden colour and crust has formed, basting the meat several times during the baking time with the stock and, if necessary, topping up with hot water.
