Lamb broth

ingredients

2 tbsp butter 2 pcs spring onions 1 tsp cumin 5 pcs black peppercorns 1 pcs shallots 2 pcs parsley 4 pcs carrots fresh coriander 2.5 litres water 4 pcs broccoli head 1 kg lamb with bone 2 tbsp salt

Melt butter in a deep saucepan and fry sliced spring onions, add cumin and peppercorns and stir to combine.

Then add the Vegetable Recipes – shallots, parsley, carrots and a handful of fresh coriander. Toss.

3.

Water the vegetable mixture.

4.

Add a few heads of broccoli.

5.

Add the lamb on the bone and season with salt.

6.

Bring to the boil and simmer slowly for about 2 hours until the meat is tender and the stock is nicely coloured.
