Lamb and potato casserole

The carrot and potato casserole is a dish that evokes the Italian countryside and is very easy to make in a casserole dish.
Ingredients for 8 people
800g lamb roast 500g potatoes 300g overcooked tomatoes 2 carrots 4 tbsp olive oil 4 tablespoons of olive oil; 1 bunch of parsley 1 tbsp fresh rosemary 1 tbsp fresh oregano 2 onions 3 cloves of garlic 100g pecorino or parmesan salt pepper
Cut the lamb into fine cubes. Peel the potatoes and carrots and chop into thin slices. Dice the tomatoes and remove the seeds. Cut them into small cubes. Cut the onions into thin rings. Finely chop the garlic. Grate the cheese.
Open a large baking dish and stir all the ingredients together with the spices and linguine.
Place the foil on a baking tray and bake the lamb and potato casserole at 180°C in the top part of the oven for 1,5h. Take off the foil and bake for about 30min, until still slightly browned.
