Kyjovská roštěná

Simplified beef patties rolled into a roll, filled with salami, pieces of sterilised cucumber and egg quarters, served with cream sauce.

Ingredients:

1 kg of beef tenderloin 150 g of salami 50 g of bacon 3 pcs onions 3 pcs boiled eggs 2 pcs sterilized cucumbers 2.5 dcl cream 2 tsp ground red pepper salt fat warm water smooth flour

Procedure:

1. Rinse the meat, cut it into slices, cut the edges, pat into the centre of the slice and season with salt
2. Cut the salami and sterilised cucumbers into noodles, the eggs into quarters, place these ingredients in the centre of the prepared rolls, roll them up, secure the edges with toothpicks or tie them with a thread and season with salt on the surface
3. Peel the onion, chop it finely and fry it in the fat in a pot
4. Add the onions to the spare ribs, fry them on all sides, then pour lukewarm water over them, add the ground red pepper and simmer covered with a lid until soft, cover with water and turn the meat over as needed during the simmering
5. Simmer the meat for about 60 minutes, then remove the soft sprats, remove the toothpicks or remove the threads and put them in a clean pot
6. Dust the juice with flour, fry, dilute with lukewarm water, stir occasionally and cook for 30 minutes, after about 20 minutes add about 2.5 dcl of cream
7. Strain the finished sauce through a meat strainer and add salt to taste
8. Cut the bacon into small cubes, partially cook them in a pan and add them to the finished sauce.
