Kroupoto is a very simple, yet tasty dish similar to the classic risotto, but the rice is replaced by groats. There are many variations, similar to risotto.
Ingredients:
Rule for 2-3 servings:
150 g
of grits
100 g
fresh mushrooms
100 g
frozen peas
100 g
of bacon
50 g
of butter
1-2 pcs
garlic cloves
1 pc
of larger carrots
1 pc
of shallots
400 ml
water or meat stock
Olive oil
mayonnaise
pepper
salt
Procedure:
Rinse the grits and put them to cook in broth or water, which should be about 5 times more than the grits, because they take on a lot! Salt the water and boil the grits until tender, 20 to 30 minutes, then let them cook for a while under the lid, then drain the broth or water and rinse the grits and let them drain thoroughly.
I put a little butter and olive oil in the pan, finely chopped shallots, let them brown, then add chopped garlic, diced bacon and sliced carrots and mushrooms, sauté everything for about 10 minutes, then add frozen peas, season with salt, marjoram and pepper.
Add the cooked and rinsed grits to the pan, stir, season to taste with salt, transfer to a baking dish, cover with lard pieces and put in the oven at 200 °C for 30-40 minutes.
