Krkonšský toč III.

Baked pancake made of potatoes, cracklings, milk and other ingredients, twisted into a roll, served with cracklings.

Ingredients:

1 kg of raw potatoes 500 g of sauerkraut 200 g pork cracklings 500 ml milk 1 tsp dried marjoram 4 pcs garlic cloves breadcrumbs as desired ground black pepper lard to grease the baking dish salt

Procedure:

1. Peel the potatoes, rinse, grate finely, let them rest in a bowl for a while and then squeeze out the excess liquid
2. Then pour hot milk, add finely chopped cracklings (about 2 tablespoons set aside), peeled garlic cloves, salt, ground pepper, marjoram and mix everything thoroughly, if the dough is too thin we can thicken it with breadcrumbs if necessary
3. Grease a baking tray with a higher rim well with lard and sprinkle with breadcrumbs, pour the prepared potato dough, smooth the surface, put it in a preheated oven at 200 °C and bake until golden brown (about 20 minutes)
4. Roll up the baked hot pancake like a roll, cut into individual portions, sprinkle with the remaining chopped cracklings and serve with sauerkraut as a main dish, but you can also serve it as a side dish with meat.

Recommendation:

Instead of cracklings we can use sliced Gotha sausage or smoked meat.
