Knee Roasted Old Bohemian Style

Sliced slice of boneless knee, rubbed with paste and baked in onion, basted with black beer.

Ingredients:

1 piece of pork knee 1 pcs of onion 1 tbsp lard 150 ml black beer To make a paste: 2 tablespoons black beer 1 tablespoon hot mustard 1 pk garlic clove ground cumin salt

Procedure:

1. Wash and dry the hairless knee, cut it lengthwise, bone it, cut out the tendons and roll the meat into a slab
2. Make a paste of black beer, peeled garlic cloves, ground cumin and hot mustard, which is rubbed over the meat
3. Roll up the meat, tie it with thread and leave it to rest in a cool place until the next day
4. Fry the peeled, finely chopped onion in hot lard, put the roll in, fry it briefly on all sides, reduce the heat and pour half the beer over the meat 5. Place in a preheated oven and slowly bake until tender, basting occasionally with the fat and basting with the remaining beer.

Recommendation:

Serve with mashed potatoes and sauerkraut.
