Kneaded cheesecake doughnuts

250 g full-fat cottage cheese (lumpy) 250 g semi-coarse flour 1 tsp baking soda 1 tbsp powdered sugar 1 pinch salt 2 pk egg yolk 3 tbsp rum 1 pk grated lemon peel 1 pk vanilla sugar’ 100 g soft butter or margarine powdered sugar for sprinkling oil for frying

Doughnuts are typical for the carnival season, but they must not be missing here either. These are not leavened, so there is not much work involved in preparing them and they are delicious.

From the ingredients listed above, make the dough and let it rest, covered, for at least 15 minutes.

Then roll out the dough to about 1 cm, cut a circle in the middle

and fry in oil.

Place on a paper towel to soak up the oil

and sprinkle with powdered sugar. You can use jam or whipped cream for flavouring.
