Khoresh-lihapata

A great meat stew with the flavours of Arabic cuisine is perfect for a cold evening. The lemon gives a much-needed zest to the chunky stew.

Ingredients for six

600 g beef or lamb 2 onions 1 teaspoon of kidney beans 2 lemons fresh parsley

Khoresh spices

1 tsp turmeric 1 tsp cinnamon 2 tsp salt 2 tsp black pepper 1 tsp brown sugar

Peel and chop the onion. Dice the meat.

In the bottom of the braising pan, place the onion and fry until sweet

Add the meat cubes and fry for a few minutes. Season according to instructions. Pour the beans into the soup. Squeeze the lemons.

Add enough water to cover the ingredients. Place the meat stew in a 125C oven, covered, for five hours. Stir in the water. The beans will start to mash into the stew and that’s ok.

Next the khoresh meat stew to the pot and stir in the chopped parsley. Leave to infuse for a while before you start on the chips.
