Key West recipe for pilau rice

When it comes to Key West recipes, pilau rice is a classic. This dish is usually made with chicken, but feel free to use shrimp, lobster, or whatever seafood you have on hand. And because it’s a one-pot meal, it’s perfect for busy weeknights or casual get-togethers.
Ingredients:
1 lb chicken, shrimp, or lobster
1 cuplong grain rice
2 cups chicken broth
1 onion, chopped
1 green bell pepper, chopped
1 tomato, chopped
1 tsp garlic powder
1/2 tsp cumin
Salt and pepper
1/4 cup cilantro, chopped
Instructions:
In a large pot or Dutch oven, sauté chicken (or shrimp/lobster) in olive oil over medium heat until cooked through. Remove from pot and set aside.
Add rice to the pot and toast for a few minutes, until lightly golden. Add chicken broth and bring to a boil.
Reduce heat to low and add onions, bell peppers, tomatoes, garlic powder, cumin, salt and pepper. Stir well and cover pot.
Simmer for 20-25 minutes, or until rice is tender and cooked through. Stir in cilantro and chicken (or shrimp/lobster). Serve warm.
You can also add other vegetables to this dish, such as carrots or peas. And if you’re in the mood for something lighter, you can omit the chicken (or shrimp/lobster) and just make a veggie pilau. Either way, this recipe is a great way to use up any ingredients you have on hand.
