Chinese street food that’s good enough for a feast. It takes a bit of effort, but of course it pays off.
Ingredients for four
1 pkt filo pastry 1 l of oil for frying 1 egg

200g firm tofu 1 bell pepper 1 carrot 3 springs of sugar 1 tbsp;100g rice noodles (dry) 1tsp sesame 1 clove garlic 1 chilli (seeds removed) 1 teaspoon grated ginger 1 teaspoon grated ginger 1 tsp;1 tbsp rice wine vinegar 1 tbsp soy 1 tsp cane sugar
Cook the noodles and stir-fry. Chop the vegetables into small sticks.
Heat the vegetables, sesame, garlic and chilli in a wok and stir-fry for a minute.
Add the vinegar, soy and ginger. Bring to a boil and remove from the plate.
Stir in the vegetables, crumbled tofu and noodles. Season with sugar, salt and pepper.
Spread a couple of spoonfuls of the batter on the filo pastry. First close the bottom, then close the top, and roll up. Brush the last side with egg and wrap the roll up.
Fry the spring rolls until golden brown.
