Keto recipe with Swiss chard and mushrooms

This dish is healthy and filling, and it’s perfect for a keto diet. Swiss chard and mushrooms are cooked in olive oil and garlic, then finished with Parmesan cheese. Serve this dish with a salad or roasted vegetables.

Ingredients:

1 bunch Swiss chard, chopped 1/2 pound mushrooms, chopped 3 tablespoons olive oil 1 clove garlic, minced 1/4 cup Parmesan cheese, grated Salt and pepper

Instructions:

In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for a minute. Add the Swiss chard and mushrooms. Cook for 5-7 minutes, until the vegetables are tender. Season with salt and pepper. Finish with Parmesan cheese and serve.

This recipe is adaptable to whatever greens you have on hand. If you don’t have Swiss chard, you could use spinach, kale, or collards. And any type of mushroom will work. I like to use a mix of oyster mushrooms and shitake mushrooms. But feel free to use whatever you have on hand.

This dish is a great side dish or main course. It’s hearty enough to stand on its own, but it would also be great served with roasted chicken or fish.

Leftovers can be reheated in the microwave or in a skillet over medium heat
