Kaplická cmunda II.

Potato pancakes stuffed with cabbage and smoked meat, garnished with parsley.

Ingredients:

700 g of potatoes 500 g of sauerkraut 500 g cooked smoked meat 100 ml milk 1 tbsp dried marjoram 3 pcs garlic cloves 1 pk onions 1 pc eggs sugar semolina to taste ground pepper fat (oil) parsley for garnish coarse flour as desired salt water

Procedure:

1. Grate the peeled potatoes finely, squeeze out the excess liquid, let it stand for a while and then carefully drain
2. Add the starch deposited on the bottom together with the beaten egg and milk to the grated potatoes, season with salt, marjoram, ground pepper, peeled crushed garlic cloves, mix and thicken with semi-coarse flour if necessary
3. Sweat the peeled, finely chopped onion in hot lard, add the cabbage, pour a little water, add salt, simmer until tender and sweeten to taste
4. Bake the potato dough into pancakes, fill them with cabbage and slices of warmed smoked meat, fold them over, garnish with parsley and serve.
