The Spanish proverb says that an apple a day keeps the doctor away from the family. I, who am skeptical by nature, do not quite believe that the benefits of apples reach such limits, but what I can assure you is that it is one of the most appreciated fruits in the kitchen, both for sweet and savory recipes. Without going any further, in recipes like this juicy apple sponge cake they are pure sweetness.
Ingredients (for a 10 x 25 cm rectangular mold)
For the caramelized apples
. Large apples that are not too tart, 3 Sugar, 2 tablespoons Butter, 2 tablespoons Ground cinnamon, 1/8 teaspoon (optional)
For the cake
. Large eggs, 3 Plain yogurt, 1 Sponge flour (with baking powder incorporated), 150 g Sugar, 150 g Sunflower oil, 1/2 cup of the yogurt The caramelized apples
Step 1
We heat the oven to 180ºC and prepare a cake pan by greasing it with a little oil or butter and sprinkling a little flour, or we can line it with the always helpful baking paper.
Step 2
In a frying pan put the two tablespoons of sugar and the butter. Cook over very low heat until dissolved. Add the apples peeled and cut into wedges and cook over low heat until they begin to turn golden brown. At this point, sprinkle with ground cinnamon and set aside.

In a bowl, beat the eggs with the 150 g sugar using an electric whisk until frothy. Without stopping beating, add the oil in a trickle and then add the yogurt.

Add the sifted flour and mix until it is completely incorporated.

Place the caramelized apples in the bottom of the mold and pour the cake mixture on top.

Bake for 40-45 minutes at 180ºC (until a skewer comes out clean).
