This chicken soup recipe is perfect for a winter night. It is hearty and filling, but still has a light and fresh flavor. And it is simple to make!
The ingredients you will need for this soup are:
1 whole chicken
1 onion
4 carrots
4 celery stalks
1 parsnip
1 turnip
1 leek
10 cups of water
2 tablespoons of olive oil
1 tablespoon of salt
1 teaspoon of black pepper
To make the soup, start by chopping the onion, carrots, celery, parsnip and turnip into small pieces. Then, heat the olive oil in a large pot over medium heat. Add the chopped vegetables and sauté for about 10 minutes, until they are soft. Next, add the chicken and water. Bring the soup to a boil, then reduce the heat and simmer for about an hour. Finally, add the salt and black pepper to taste.
This soup can be serve as is, or with some crusty bread on the side. It would also be great topped with some shredded cheese or croutons
