Jihočeský bác

An old Bohemian recipe, where it is actually a risen dough for potato pancakes baked in the oven. The base is finely grated potatoes flavored similarly to potato pancakes with the addition of sourdough. The finished bác is sliced and served with sauerkraut.

Procedure:
1. Grate the potatoes finely, squeeze out the water, scald with hot milk
2. Add the eggs to the potatoes, add the flour, season with marjoram, garlic, salt and pepper, add the sourdough starter, mix, add flour if necessary and leave in a warm place to rise
4. When the dough is risen, stir in the crackling, cooked and sliced smoked meat or sausage and pour the mixture into a greased baking dish, if you want to keep the tradition, sprinkle with poppy seeds
5. Cut into pieces and serve with sauerkraut.
Note:
Crackling, cubes of smoked meat, sausage were added to bác. It has many variations, some places bake it without smoked meat and cracklings, or add poppy seeds. There is a similar recipe for Krkonoše spin. Other Old Czech names for this dish are vošouch, kramflek.
