Javanese Beef

Semur djawa, as this recipe is called in its homeland, is made from beef roast cut into larger cubes that is simmered in a pot along with other ingredients. It is a kind of Indonesian stew.

Procedure:
1. Prepare the marinade; in a large bowl mix the brown sugar with the sweet soy sauce, add the date paste or vinegar, 1 teaspoon of salt and the grated piece of ginger, mix everything well
2. Put the beef cut into larger pieces into the marinade and let it marinate for 30 minutes
3. Finely chop the chilli pepper without seeds, as well as the onion and garlic, mix the spices together (except pepper)
4. Fry the onion and chilli pepper in hot oil, after 5 minutes add the ground spice mixture and garlic, sauté and stir for another 2 minutes, then add the meat cubes, sauté for another 5 minutes, stirring continuously

6. Covered, cook until the meat is tender, about 1.5-2 hours, add warm water as needed, but only enough to keep the meat dry, it must not float in the water!
