Japanese cheesecake with only three ingredients, easy recipe

Contrary to what many people think, achieving good results in pastry is much easier than in savory dishes. And when it comes to making desserts, the key is to follow the recipe, without improvising. Unless you have a lot of experience and are very clear about what you are doing, in pastry recipes you have to follow the steps as they are written.
Ingredients
White chocolate for melting, 200 g Philadelphia type cream cheese, 200 g Eggs, 5

Step 1
Light the oven at 170ºC and put inside a large tray with about 3 centimeters of hot water to preheat the oven.
Step 2
Chop the white chocolate, put it in a heat-resistant bowl and melt it, preferably in a bain-marie, as it will be easier to control that it does not burn.
Step 3
When the chocolate has melted, add the cream cheese and mix well with a wooden spoon or a silicone spatula. Remove the bowl from the water bath and wait for the mixture to come back to room temperature.
Step 4
Separate the egg whites from the egg yolks and add the latter to the cheese and chocolate mixture with the help of a whisk.
Step 5
Whip the egg whites until stiff and add them to the previous mixture using a silicone spatula. It is easier if we incorporate them in several batches.
Step 6
Line a 18-20 cm diameter springform pan with baking paper, pour the mixture in it and put it in the pan with water in the preheated oven at 170ºC and bake for 15 minutes.
After 15 minutes, lower the temperature to 160ºC and bake for another 15 minutes. After this time, without opening the oven at all, turn it off and wait another 15 minutes before opening it.
Step 7
When the 45 minutes have passed (15 at 170ºC, 15 at 160ºC and 15 off), we open the oven, remove the pan, let it cool 10 minutes, unmold and leave our three-ingredient Japanese cheesecake on a rack until it has finished cooling.
Step 8
Once cooled we can serve it just as it is delicious or we can decorate it with whatever we like, from a little powdered sugar on top or cinnamon, fruit, jam or whatever we like.
