Italian tomato soup with polpette
ingredients
3 tbsp olive oil 1 pk shallots 1 clove garlic 1 pk carrots 1 pk parsley 1 dl red wine 1 can of tomatoes ground black pepper 6 leaves fresh basil 1 liter vegetable broth water as needed salt

Heat the olive oil in a saucepan and fry the diced shallots.

Add the sliced garlic and mix everything together.

Add the sliced carrots along with the parsley.
4.
Pour in the red wine and cook until the wine is reduced.
5.
Add the tin of tomatoes.
6.
Season the whole mixture, add fresh basil and pour in the vegetable stock.
7.
Bring to the boil and cook for 20 minutes.
8.
Mix the whole mixture with a stick blender until smooth. If the cream is too thick, add a little water.
9.
Salt and pepper to taste.
10.
Finish with the pre-prepared Italian meatball polpette
