Italian Pancakes

Dough filled with grated cheese and sliced olives, baked in the oven until golden brown.

Ingredients:

400 g of semi-coarse flour 200 g shredded hard cheese 100 g sliced black olives 30 g raisins 150 ml of lukewarm water

100 ml of olive oil 1 tsp of granulated sugar 1/2 tsp salt 1 – 2 tbsp parmesan 1 tbsp smooth flour

Procedure:

1. Pour lukewarm water into a mug, stir in the sugar, plain flour, yeast and leave in a warm place to rise
2. Sift the semi-coarse flour into a bowl, add salt, olive oil and sourdough starter and work into a smooth soft dough, cover with a cloth, let rise in a warm place, then divide into two parts (larger and smaller) and roll out
3. Line the pie tin with baking paper, fill it with the larger dough, sprinkle with grated hard cheese, sliced olives, cover with the other part of the rolled out dough and let it rise for a while
4. Then pierce the bread several times with a fork, sprinkle with Parmesan cheese and bake in a preheated oven at 180 °C for about 30 minutes.
