Irish mashed potatoes

The Irish mashed potato, or Colcannon, is country food at its most authentic. The potatoes are served with cabbage as a vegetable and a generous helping of cream and butter. That’s what makes a good mashed potato.
Ingredients for six
1 kg of floury potatoes 100g kale 4 spring onions 2 dl cream 2-3 dl drinking milk 50 g butter 1 tsp sugar 2 tsp salt 1 tsp black pepper
Tip: Irish mashed potatoes can be made with cabbage other than kale. In this case, pay attention to the cooking time.
Peel the potatoes and bring to the boil.
In the meantime, prepare the kale; remove the thick stems and tear the leaves into small pieces. When the potatoes are soft, pour off the water and leave to cool for a while. Cut the butter into a saucepan and allow to melt.
Crush the potatoes and start working with a masher or machine. Add the cream. Season with sugar, salt and pepper.
Add the milk until you get a good consistency. Allow the Irish mashed potatoes to cook for a few minutes before serving on a plate, under a lid.
