Irish fish soup “Seafood Chowder”

butter olive oil 500 g salmon 100 g smoked salmon 100 g shrimps 1 pk onions 2 pk carrots 50 g celery 1 cup white wine 500 ml broth 1 pk cooking cream 2 pk potatoes 100 g overgrown bacon 2 tbsp plain flour 2 pk bay leaves thyme salt ground black pepper parsley basil

We often bring back recipes from our holidays for our favourite dishes we enjoyed there. Our family enjoys seafood chowder every time we visit Ireland. I’m sure you’ll love it too.

Cut the bacon into small pieces, cut the onion the same way. Put the pot on the stove, heat it up, and then add a slice of butter and olive oil all at once. Let it melt and add these two ingredients and sauté until soft

When the onions are ready to be cooked to a glassy consistency, sprinkle the flour on top. Mix everything well and fry.

Cut the celery, carrots and potatoes into smaller cubes. Throw these in at once with the base and saute like this on a medium flame. Finally, add salt, pepper, herbs and bay leaf.

Cut the fresh salmon into large cubes and remove the skin. Otherwise it will fall apart during cooking. Remove the tail from the prawns and wash them.

Baste the remaining Vegetable Recipes with the wine and stock. Now throw in the fresh salmon and prawns. Stir everything together and continue cooking.

When the Vegetable Recipes are already soft, then add the smoked salmon torn into pieces, boil for a while and you can prepare the cream. From that, pour a little of the soup to the cream, stir and then let it cook for a few minutes.

Serve the hot soup on the table, garnish it with the parsley and your choice of relish.
