Dal Makhani is a favourite vegetarian curry in both India and western countries. There are many recipes for this delicacy, I offer you one of them 🙂 1. Soak the beans in water overnight. 2. Boil the beans until tender, drain the water (but don’t throw it away, you may need it at the end) and gently mash them. 3. Meanwhile, melt the butter in a pan and add the cumin. Fry for a minute or so until it starts to smell. 4. Add the bay leaf, ground cinnamon, cardamom and toast again for a minute over a gentle heat. 5. Add the chopped onion and chilli. 6. Blend the tomatoes with a stick blender and add to the onions along with the chopped garlic and ground turmeric. 7. Stir in the cooked beans and cream. 8. Mix and when the consistency seems not creamy enough, add the water from the cooked beans that we kept at the beginning. Season everything with salt to taste. Serve with Indian flatbreads, rice or without side 🙂 9. Bon appetit!
