3 tbsp oil 3 cloves garlic 6 pcs carrots 1 tsp chopped fresh ginger 1 tsp ground coriander 1 tsp brown sugar pcs salt 1 tsp curry spices 1 tsp turmeric (ground) 600 ml water or broth 1 can coconut milk

Fry sliced garlic in olive oil along with grated ginger.

Add the sliced carrots and stir.
3.
Add all the spices – ground coriander, ground turmeric, curry spices, salt and brown sugar.
4.
Stir to combine the spices and cover with water or stock, just enough to submerge the carrots.
5.
Cook for 15 minutes.
6.
Pour in the can of coconut milk, stir and blend with a stick blender until smooth.
7.
Serve sprinkled with chili flakes and edible flower.
