Minced meat steaks for everyday and special occasions

There are many ways to make a great mince pie. Burger patties

Pork and beef mince are excellent everyday food, if you dare to make them properly. The onion must be cut into a very small cube and cooked until sweet, otherwise the minced meat will have a crumbly texture and the flavour will not do it justice. If you don’t have the energy to carve, use onion flour instead of fresh onion. These will give the minced meat a good texture. If you want a more international flavour to your minced meat, season it with pesto, feta or chilli, for example.
Superb burger patties should be made with such high quality beef that the result is a medium-rare. No breadcrumbs or eggs are added to good quality meat, just salt and pepper.
Pork chops with minced pork
Often the best dough for minced beef patties is made in a food processor, but you can also make it with an onion. Mix 1 dl of breadcrumbs, salt, sugar and a generous amount of pepper in a bowl. Then whisk in the milk, egg and Worchestershire. Allow to steep for ten minutes. Then chop the onion very finely. Add the butter to the pan and cook until the water has evaporated and the onion begins to brown.
Place the meat and onions (or onion flour) in a food processor (if you are making a sauce, the meat still needs to be cut into smaller pieces with a knife). Season the dough well until smooth and fairly stiff.
Lay 1 dl of breadcrumbs on a baking tray. Shape the mincemeat dough into a portion the size of a ping-pong ball. Place the mould on top of the breadcrumbs and press the meat evenly into the bottom (about 2 cm thick) to make a nice steak. The minced steaks will be as even as possible and will have a nice crispy surface.
Remove the steak from the mould, turn it around so that the other side of the steak gets the breadcrumbs. Set aside and prepare the rest of the dough in the same way.
Make a cast-iron skillet or other good frying pan over medium heat and place 1 tablespoon of oil and 1 tablespoon of butter in it. Fry the minced meat until brown on each side, 2-3 minutes per side.

For a proper burger patty, you need first-rate meat and a meat grinder, unless you ask the butcher to grind it up for you. Take the meat out of the pan about half an hour before frying, season with salt and pepper and fry both sides until well done. It’s a good idea to cook the meat until red inside.
