Meat cake

Lunch cake is a delicious alternative to meatballs for birthdays or just for Sunday dinner. It is cooked until tender with a long oven-cooking process.
Ingredients for four
. 700g roast beef 1 onion 1 pepper 1 pkt pancetta or bacon blue cheese salt and pepper baking paper parsley for garnish
Slice the roast beef into 2 cm thick slices (crosswise) and pound the slices very thin. Season with salt and pepper.
Place a piece of baking paper in a circle on the bottom and sides of the baking dish. This will prevent the meatcake from sticking to the bottom. Place the slices of pancetta on the baking paper in as even a layer as possible.
Place a layer of roast beef on top of the pancetta. Slide on the next layer of onions and peppers. Press down firmly. The vegetables will press down into a thin layer in the oven.
On top of the vegetables, add a layer of roast beef, followed by blue cheese. Top with a layer of roast beef. This will become the base of the meat pie when it is served after cooking.
Bake the meat pie in a 150C oven for a couple of hours. Pour off the excess liquid (or make a sauce) and leave to cool for half an hour.
Before serving, place the oven at 250C. Place the meat pie on an ovenproof tray. Remove the baking paper and grill the meatcake in the oven for about 15 minutes.
Remove to serve and garnish with chopped parsley.
