Almond lemon chicken

Lemon chicken is refreshing and light. Marinated in yoghurt and lemon, the chicken thighs get a nice crunch from the almond and aroma from the cloves. It is also a great accompaniment to pasta.
Ingredients for four
400g chicken fillets 25g almond flakes 1 handful of parsley
Marinade
1 tbsp unflavoured yoghurt 2 tbsp lemon juice 1 tbsp lemon zest 1 tsp honey 1/4 tsp ground cloves 1 pinch of cayenne pepper salt and pepper
Stir marinade ingredients and mix until smooth.
Cut the chicken into stock cubes. Place in a bag and pour the marinade over the chicken. Refrigerate and marinate in the cupboard overnight.
Soak the spare sticks in water (do not catch the meat). Thread the chicken cubes onto sticks and grill under barbecue for 15 minutes, adding water if you want to cook. If there are no racks, then bake the oven täysillä.
Unload the skewers onto a baking tray, sprinkle the almond flakes on the tray and brown the lemon chicken in the oven for a few minutes under the racks.
Sprinkle the parsley on a plate and top with the chicken. Garnish with lemon slices.
