How to prepare the Joselito Supernatural chop at home

Joselito has managed to reinvent the pork chop with its new piece, the Joselito Supernatural. This new cut of fresh meat is a commitment to innovation that is achieved by refining the chop for more than 60 days. This is how it is cooked to perfection.

Step 1
The first and fundamental thing is to temper the chop for 2 hours so that it loses all the cold from the refrigerator. It is essential to carry out this step because we are going to cook it rare, and if it is not tempered it will be cold inside.
Step 2
Heat a frying pan at full power for a few minutes until it reaches maximum temperature. If we have a cast iron skillet is perfect, if not we can use any pan we have at home.
The Supernatural Joselito chop can also be cooked on the grill, and in fact it is the best way because the flavor of the ember is perfect, but we focus on how to prepare it at home with a skillet or electric grill.
Step 3
Lower the heat to 7/10 and mark the fat. Start by taking the chop with large tongs and marking the fat until it browns. In this way we will make it melt and we can cook the Joselito Supernatural in its own fat.
Step 4
With the fire still at 7/10 we cook the chop for 3 minutes on each side until it is completely browned. Step 5
When it is ready, transfer it to a cutting board, follow the line of the bone and then fillet it into 1 cm thick strips. Drop a few flakes of fleur de sel on top, serve and eat immediately while still warm.

The Supernatural Joselito is not just a pork chop, it’s a fresh cut of meat totally different from what we knew because instead of being cooked fresh. The Supernatural is refined in the same natural drying sheds as Joselito hams, and this is how the unique texture of this piece, which could almost look like red tuna, is achieved.
The idea came fortuitously from a meeting between Victor Churchill (considered the best butcher in the world), Alex San Martín (Manager of Sanmartí 1850) and José Gómez, while walking through the Joselito cellar discovering smells and atmospheres. There they came up with the idea of letting the chops rest until they get the flavor of this special cut.
