White rice, or white rice, is one of the most popular side dishes in everyday cooking. It is a cheap food, which is also quick and clean when cooking, as it does not require previous handling that generates waste as would be the case of potatoes that must be peeled and cut before cooking.
Not surprisingly, it is one of the most consumed foods in the world, not only for the above reasons, but also because it is a very versatile food that works well as a garnish for all kinds of foods such as meats, fish, Vegetable Recipes, sauces,…
Habitual in Asian cuisine and increasingly present in Western cuisine, in which we often make white rice to prepare salads, various side dishes or simply with a couple of fried eggs and we are so happy with a meal.
How to cook perfect white rice
Cooking white rice is very simple, but before getting down to work you need to be clear about the result you want to achieve, because with that you will know what kind of rice you should use and how you should cook it. It is not the same a rice for salad that you want to be completely loose, that a basmati rice in which you want to keep all the aromas or a white rice to accompany dishes such as meatballs in sauce or squid in its ink and you want it to be more mellow.
So let’s go by parts.
How to make white rice for salad
Now that we are in time for salads and fresh dishes, I’m going to tell you a recipe, to prepare a white rice that is totally loose. Actually, more than a recipe is a trick that will allow you to cook a totally loose white rice and much faster than any other recipe.
It is neither more nor less than cooking rice -preferably long grain- as if it were pasta, ie in a pot with plenty of boiling water. As simple as filling a pot with water as if we were going to cook pasta, and when it starts to boil, add the rice and let it boil for ten minutes. After that time check the point and, if necessary, cook one or two minutes more.
Drain and rinse under a stream of cold water to cut the cooking and remove any remaining starch. Drain and dress to taste.
When cooking the rice like this, we can cook it with or without salt, as the salad dressings will already include this ingredient.
How to make a tender white rice
And note that by tender I do not mean overcooked or pasty, something that some bars confuse a lot.
To make mellow white rice you need: half an onion, a clove of garlic, two tablespoons of extra virgin olive oil, a glass of round SOS rice, two and a half glasses of water, a bay leaf and salt to taste.
To prepare it, do the following:
In a saucepan heat the oil, over medium heat, add the garlic peeled and finely chopped, let it cook until it begins to give off its aromas.
Then add the onion peeled and finely chopped, let it cook until transparent.
Add the water, salt and bay leaf, wait for it to boil and add the rice well distributed. When it comes to the boil again, lower the heat almost to the minimum, just enough to keep the “chup chup” and let it cook without stirring for 18-20 minutes.
How to cook white rice in the microwave
A great forgotten when it comes to cooking rice is the microwave and it’s a shame because you get incredible results and in less time than by other methods.
I especially like it when I prepare basmati rice as a garnish for Asian dishes.
Making white rice in the microwave is as simple as putting in a microwave safe container two measures of water with salt to taste, heat for two minutes at 800W, add the rice and heat for 9 minutes at 800W. If after this time it is still a little hard, heat for another minute and check again. In total it should not be necessary more than ten minutes.
