How to make vegetable stew step by step

When preparing a vegetable stew it is advisable to put in the pot all the Vegetable Recipes you find in the fridge and let it cook all at once for the same time, because some will be fine, others will be hard and others will be overcooked. The most comfortable is to use a steamer and place on top the Vegetable Recipes that need less time to be removed from the fire each of the Vegetable Recipes as they are at their point.
Ingredients
Green beans, 250 g Baby broad beans, 100 g Peas, 100 g Carrots, 2 Artichokes, 2 Salt Onion, 1 large Potato, 1 medium Joselito Coppa, 100 g Extra virgin olive oil, 2 or 3 tablespoons
.Step 1
Start by frying the peeled and brunoise onion with a little salt in a large frying pan over low heat until it is almost caramelized, so we put it before starting with anything else, so that it is done in time.
Step 2
Then what we will do is wash, peel and cut the carrots into very thin slices; wash the green beans, remove the tips and the “threads” sides and cut them into pieces about 3 centimeters long; and shell the beans and peas if they are not frozen.
Step 3
The important thing is that all the Vegetable Recipes are at their cooking point and for that you can organize them as you find more comfortable. In case it helps you I tell you how I have done it, in a saucepan with boiling water and a little salt I have put to cook the green beans and artichokes and, taking advantage of the steam that is generated in the cooking I have put in the lower basket of the steamer the carrots and in the upper one the peas and beans as you can see in the images of the video. The peas and broad beans, being frozen, with 5 minutes are enough, the beans and artichokes need about 15 and the carrots about 10. As they are ready we reserve them in a bowl. The broth from the beans and artichokes will reserve.
Step 4
While the Vegetable Recipes are cooking, peel the potato, cut it into small cubes of about one centimeter, salt it and fry it first over medium-low heat and in the last minute with a high heat so that the pieces are crispy on the outside and tender on the inside.
Step 5
When everything is ready, add the reserved Vegetable Recipes and a ladleful of the broth from cooking the Vegetable Recipes to the onion. Mix everything together and sauté over a high heat so that the Vegetable Recipes come to temperature.
Step 6
Finally, add the diced Joselito Coppa Joselito and the crispy potato cubes and, if desired, a couple of chopped hard-boiled eggs.
Notes
You can serve our vegetable stew as a garnish for other dishes. We can also serve it as a single dish by adding a couple of chopped hard-boiled eggs, which also go very well with it.
