How to make torrijas: Dabiz Muñoz’s tricks to surprise

Of the many lessons that should leave us everything we are living these weeks, one of the most immediate is the amount of cooking tricks that we are learning from the great chefs of this country that these days do not stop delighting us with their dishes on their Instagram profiles. A couple of days ago, for example, chef Dabiz Muñoz explained how to make very easy and very surprising torrijas.
Ingredients
For the Donuts torrijitas
. Donuts, 8 Cream, 500 ml Whole milk, 500 ml Ginger, a piece of a couple of centimeters Peel of half a lemon without the white Peel of a lime without the white Egg yolks, 4 Butter, 75 g
For the ras-el-hanout whipped cream
Very cold whipping cream, 500 ml Sugar, 80 g Ras-el-hanout, 1 teaspoon (or any unsalted curry) Thyme
Step 1
Cut the donuts in half and each half into three pieces. We place them separately in a bowl and put them in the fridge uncovered to harden and make them easier to handle.
Step 2
In a saucepan, heat 500 ml of milk, 500 ml of cream, the ginger and the lime and lemon peels over very low heat. We wait until it starts to boil and leave it for three or four minutes. Remove from the heat, cover and let cool in the refrigerator.
Step 3
After eight hours, remove the citrus peels and ginger, add the egg yolks and mix well with the help of a whisk.
Step 4
Remove the Donut pieces from the refrigerator, place them in the milk mixture for one minute, remove them, place them back in the bowl and leave them in the refrigerator for another half hour to drain the excess liquid.
Step 5
To prepare the ras-el-hanout whipped cream, put in a bowl the very cold cream together with the sugar and the ras-el-hanout and beat with an electric whisk until it has a creamy texture but without being whipped. Add a few thyme leaves and set aside.
Step 6
After half an hour, heat the butter in a frying pan over medium heat and when it is hot, place the donut pieces on the cut side, wait for them to brown and turn them over until they are browned on all sides.
Step 7
Serve in a serving dish, accompanied by the whipped cream or you can serve them individually by reconstructing the donut with six little cakes placed in a circle and a quenelle of whipped cream.
