Smoke of Hot Smoke in Snack Cakes
In our last Cooking School, we made some particularly delicious and gorgeous snacks. Probably everyone knows about these breadcrumbs, which are great for making all sorts of snacks. But I’ve heard that many people run out of ideas about what to put in the baskets, because you don’t want to offer the same thing every time. Most of the time they make some kind of cheese and garlic or ham filling. But Margit has plenty of ideas and came up with something really special – a hot-smoke wind puff with cream cheese.
You don’t need many things to make these baskets. Of course, the fish has to be fresh and well made. Our hot-smoked wind pike comes from M.V.Wooli’s Mati Fish Shop, which I really recommend to everyone as the selection is superb and you can always be sure of the quality. The wind pike itself is a pretty bony fish and is quite a nuisance to clean, even though it tastes very good.
To keep the wind pike in the baskets nicely and taste juicy, you should put a mixture of cream cheese and wasabi in the bottom of the basket. Wasabi just goes well with fish dishes and gives an exciting flavour. Garlic sprouts, on the other hand, are a great garnish and taste great too.
At school, these baskets were a big hit and everyone realised how easy it really is to make something special and tasty that’s also a lot of fun! You just have to think outside the box ��
