Homemade vegan blue cheese recipe

Ingredients:
1 cup macadamia nuts, soaked overnight
1/4 cup water
2 tablespoons lemon juice
1 teaspoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon fresh parsley, chopped
Instructions:
1. Drain and rinse the macadamia nuts.
2. Add the macadamia nuts, water, lemon juice, apple cider vinegar, salt, onion powder, garlic powder and fresh parsley to a high-speed blender or food processor.
(If you don’t have a high-speed blender, you can soak the nuts for 2-3 hours before blending to make them easier to blend.)
3. Blend until the mixture is smooth and creamy.
4. Taste and adjust seasoning as necessary.
5. Store in a airtight container in the fridge for up to 1 week.
How to Use Vegan Blue Cheese
This vegan blue cheese would be perfect on top of a salad, in a wrap or sandwich, or even just by itself as a dip!
