Homemade teriyaki sauce, how to make it and what to use it for

Making homemade teriyaki sauce is very easy. Who hasn’t eaten or heard of the famous teriyaki chicken? Well, it owes its name to the sweet soy-based sauce that bathes it. I like to make this kind of sauces homemade because the ones you buy from a can, usually, have a lot of junk and are high in salt and/or sugar. More if it is as fast to prepare as this one; the only mystery is that the sauce takes the desired consistency and we give it the point of flavor that we like the most. Of course, we can pack our sauce or store it in bottles and it lasts a long time in the fridge.
Teriyaki sauce is great for both chicken teriyaki and to finish sautéing noodles with Vegetable Recipes, also to glaze salmon or cod or to make any kind of stir-fry. Even to make a roasted cauliflower finished with teriyaki sauce.
The goal is to achieve a dark, dense sauce with the mix of sweet and salty in it; it has to have a lot of umami. For me, garlic and ginger are essential and, if we wanted to, we could add a little mirin to increase that acid point. This sauce is closely related to Japanese cuisine from the 17th century onwards and they generally use it to baste the food they grill. We could also use it as a marinating sauce without adding cornstarch, without thickening it, come on.
We can leave the pieces of garlic and ginger, as I do because I like it, or we could strain the sauce once infused in them so that their flavor remains but not the pieces. We could also add a few drops of sesame oil that give it a very special taste. Normally, when using it, I use the teriyaki sauce just at the end of the recipe because it has sugar and it is very easy to burn if we are not very careful. A sauté at full power but very fast will be more than enough.
Examples of the use of this sauce, in addition to the mythical chicken or noodles, could be some fried or grilled chicken wings glazed, some quick spaghetti with shrimp and asparagus to which we will give the final flavor with the sauce, a grilled teriyaki salmon with seaweed salad very easy to make, some succulent bonito dumplings with teriyaki sauce or some udon noodles with beef, teriyaki and peanuts. A fantastic option is to prepare some juicy barbecued ribs and finish them with the teriyaki sauce until they are a little burnt, so that they are delicious.
How to make homemade teriyaki sauce
Ingredients
. Soy sauce, 90 ml Water, 250 ml Corn starch, 2 tablespoons Chopped ginger, 1 teaspoon Garlic clove, 1 pc Brown sugar, 4 tablespoons Molasses, 1 teaspoon Honey, 2 teaspoons
Step 1
Peel the ginger with the help of a spoon or a knife and chop it very finely. Peel also the garlic clove and chop it as small as possible. We could crush it with a grinder or even get its juice with a blender.
Step 2
Leave in a small glass 4 tablespoons of water and mix with the cornstarch.
Step 3
Mix the water with the soy sauce, honey, molasses, minced garlic, minced ginger and brown sugar in the ladle and bring to a gentle boil.
Step 4
When it starts to boil and the sugar has completely dissolved, add the cornstarch-water mixture and stir well with a whisk until it starts to thicken. Then lower the heat and continue stirring until the desired texture is achieved. If we see that it is too thick add a little more water.
Step 5
If we want, add a little mirin and also a little sesame oil. Now it will be time to strain if we do not want to find the pieces of garlic or the pieces of ginger.
Steep the mixture in the water.
