Katka Sonlajtner, who you may know from Instagram as @catherine_the_homebaker, showed us how to bake a basic sourdough bread.

Place the weighed flour in a bowl, add water and caraway seeds and work with your hands to form a sticky dough, cover with a tea towel and leave to rest for 2 hours.

Then add the sourdough starter to the dough and work it in progressively by folding the dough in the bowl.

Salt the dough and knead it again, cover it and let it rest for another 2 to 3 hours.

Then turn the dough out onto a lightly floured work surface and shape it into the shape of our scarf. Place the loaf in the wrapper and leave to rise for 3 to 4 hours.

After this time, cover the wrapper with baking paper and turn the loaf out of the wrapper directly onto the paper. Cut the surface of the loaf and place it and the paper on the baking sheet.

Heat the oven to 250-260°C, place a baking tray with 250 ml of water on the bottom of the oven and place the baking tray with the loaf on the oven rack and bake for 25 minutes, then remove the tray with the water and bake the loaf for another 25 minutes at a reduced temperature of 210°C (210°F).
