Beautifully fluffy and soft rolls…

I make a sourdough starter with a little milk, sugar and yeast.

I sift the flour into a bowl, add the milk, salt and sourdough starter. I knead the dough. The dough should be thicker.

Then I turn it out onto a lightly floured board

and knead it properly, like a noodle dough, for at least 3-4 minutes,

to make it smooth.

Place the dough back in the bowl and let it rise in a warm place to double its volume.

After the dough has risen, I turn it out onto a board,

and divide it into 20 equal parts.

I make each into a ball and let it rise, covered, for 20 minutes.

Then I roll each ball into an oval and roll thinly

I place each roll on a greased baking sheet,

cover with cellophane and let rise for at least 15-20 min. Then brush with beaten egg yolk and bake. Bake for 12-15 min at 200-220 °C, depending on the type of oven. After baking, turn out onto a wire rack and leave to cool.
