Homemade pistachio paste and powder

200 g pistachios (unsalted, peeled) 200 g powdered sugar 4 tbsp water 1 pk egg white

Blanch the pistachios briefly in boiling water. Remove from the water and discard the thin brown skin.

Preheat the oven to 170°C, place the pistachios on a baking tray and put them in the oven for 5-7 minutes.

In the meantime, put the water and icing sugar in a small saucepan and heat on a plate. When the syrup reaches 120°C, add the pistachios and stir with a wooden spoon. Remove the pistachios from the pot and place on a separate plate to cool down.

Once cooled, place in a pestle and mortar and grind to a powder. This way we have a tasty powder for decorating.

To make the paste, add the egg white and mix in the chopper until you get a smooth paste.

Storage: Cover the paste with cling film and put it in the refrigerator and just put the powder in a box or bottle and seal it hermetically.
