Homemade Nocilla: easy and quick recipe, with and without Thermomix

Noccilla is one of the most popular sweets around, and preparing homemade nocilla couldn’t be easier. Just follow this step-by-step recipe and you’ll have a scrumptious sweet ready in just a few minutes.

Ingredients

Roasted hazelnuts without skin, 100 g Milk, 100 ml Olive oil, 50 ml Cocoa, 25 g Agave syrup, 25 g (or 50 g white sugar)

We start with the version of nocilla that does not need Thermomix, although you will need a food processor or something that allows you to grind all the ingredients well, which is the key to the recipe.

Step 1

Grind the hazelnuts in a food processor for about ten minutes until you have a butter-textured dough.

Step 2

Add the rest of the ingredients and blend again for about five minutes until the mixture is completely homogeneous.

Step 3

The mixture will be slightly liquid due to the heat. We take the opportunity to transfer it to one or more jars that we can close.

Step 4

Chill in the refrigerator for at least an hour. It will be ready to serve.

Homemade nocilla with Thermomix

If you have Thermomix at home or any other food processor, preparing nocilla is even easier. Follow this recipe step by step and you will see how tasty it is.

Step 1

Add the hazelnuts to the mixing bowl and blend 20 seconds at speed 10. You want it to have a buttery texture.

Step 2

Add the rest of the ingredients except the milk and oil and program the Thermomix 2 minutes, temperature 37ºC and speed 5.

Step 3

Add the milk and oil and program 3 minutes, temperature 37ºC, speed 3.

Step 4

Because the mixture is liquid from the heat, transfer it to one or more jars, put it in the refrigerator and let it cool for at least one hour. After this time it will be ready to serve.

How to make perfect homemade nocilla

The recipe for homemade nocilla is so simple that anyone can prepare it without any difficulty at home. However there are some important aspects and doubts that may arise, so let’s see how we can modify or perfect this homemade nocilla.

The most important thing to prepare this recipe is the food processor, I use this one from Braun that works with the Minipimer, but any will do, although it is recommended that it is wide. If you have Thermomix or other food processor follow the steps indicated in the version with Thermomix and you will have a fine homemade nocilla.

If you make the version without Thermomix, be patient and trituradad well, there is the key to this homemade nocilla is perfect. Possibly the motor of the mixer gets very hot, so you can make stops of about 30 seconds to cool down and not spoil.

I always prepare this recipe with agave syrup but you can change it by double the amount of sugar if you prefer. The good thing about agave syrup is that it has twice the sweetening power of white sugar, and therefore allows you to use half the amount, that is, you will have half the calories provided by this carbohydrate. In addition, agave syrup has a lower glycemic index, so our system will absorb it more slowly.

This homemade syrup lasts a week in the fridge at least, I’ve never managed to hold longer without anyone eating it, so we do not know what happens to it after a week. It’s so tasty that it’s hard to resist it.

You can serve your homemade nocilla on some freshly baked homemade bread toasts or with some delicious pancakes prepared instantly in the morning for breakfast. It’s delicious either way, I sometimes eat it by the spoonful with a banana, crazy.
