Homemade kulič

Traditional Ukrainian dessert, which is baked only at Easter or Harvest Festival.

Ingredients:

500 g smooth flour 125 g butter 50 g of candied fruit 50 g raisins 30 g raisins 5 pcs yolks 1 dl strong black tea 4 tbsp rum or cognac 2 tsp lemon peel 1/2 teaspoon ground cardamom 1/2 teaspoon nutmeg 1 packet of vanilla sugar tsp of saffron tsp of salt

Procedure:

1. Crumble the yeast into the lukewarm milk and add a little flour, let the yeast rise
2. Boil about 50 g of flour in cold tea until you get a semi-solid dough, stir in the risen sourdough and let it rise again
3. Beat 4 egg yolks with sugar and salt, stir the spices and fruit into the remaining flour
4. Mix everything together; i.e. the flour, the risen part of the dough and the beaten egg yolks, including the melted butter, to make a dough
5. Adjust the density of the dough by pouring in rum or cognac and possibly tea so that the dough does not stick when it is worked out, leave covered to rise
6. Transfer the dough to a well-greased baking tray and leave to rise again
7. Bake the ball in an oven preheated to 180 °C for about 40-60 minutes, depending on the mould you choose.

Recommendation:

This dessert is also often decorated with various sugar toppings or just sprinkled with icing sugar.

Note:

The Ukrainian kulich usually uses a tall, narrow mould, like a bean tin or similar, rather than a traditional baking tin or round cake tin. A true kulich is the pride of a cook if it is taller than her friends!
