Homemade Compote

Apple and pear marigolds cooked for a while together with sugar, lemon juice and spices, served chilled.
Ingredients:
Procedure:
1. Wash the apples and pears under cold running water, drain, then core them and cut them into marigolds
2. Put the prepared fruit in a pot, pour cold water over it so that it is completely submerged and add the juice of the lemon, both sugars, spices and a few slices of lemon zest
3. Bring everything to the boil and simmer for a while, about 2 minutes, so that the fruit turns brown but doesn’t boil
4. Remove from the heat and leave to cool, preferably overnight
5. Before serving, add the currant balls to the compote.
